Montelobos is a unique spirit, meticulously crafted with the same traditional and artisanal mezcal techniques used for 500 years. On the nose you get cooked agave, smoke and citrus and on the palate capers, nutmeg, and pink pepper. Montelobos Ensamble is made from a blend of agaves: an explosion of contrasting flavors, with body and acidity that highlights smoke and fruit. This mezcal is made using papalote agave, complemented with espadin and tobala agave. Montelobos Mezcal is committed to sustainability and has pledged to never use wild agaves in their mezcal production. The mezcal is popular inside Mexico and is also exported. It is made according to Saldaña’s vision and passion for agave and artisanal mezcal with respect for traditional production methods, sustainability, and the quality of life in the communities and families who have produced mezcal for generations.Saldaña worked with two mezcal-producing families in Oaxaca and Puebla. This Mezcal is crafted by biologist and distiller Iván Saldaña and mezcalero Don Abel Lopez. Montelobos Joven is an artisanal Mezcal made in Santiago Matatlán produced with 100% organically certified agave Espadín. This flight features three wild agave varietals Salmiana, Cupreata and Espadin. The process in which these chicks are raised brings not only a higher quality meat, but also a type of meat that lends itself to taking on all the great marinades and spices we use in house. Besides their organic diet of corn, soybeans, vitamins, and minerals, Bell & Evans also provides a clean and stress free environment for their chicks which makes us more than confident in the product they are providing. Located in Fredericksburg, Pennsylvania, Bell & Evans is the first company to raise 100% of their flocks without any antibiotics or hormones. We have recently partnered up with Bell & Evans to provide all the organic chicken you see on our menu. The process in which these cattle and pigs are raised not only produces a higher quality meat, but also a type of meat that lends itself to taking on all the great marinades and spices we use in house.Īdditionally, we've moved into whole animal butchery which allows us to provide great product without any waste. Their farm raised animals are completely antibiotic and hormone free, a practice that gives a confidence is serving it to you our valued guests. Located in Hope, New Jersey, Beaver Brook Ranch raises 100% grass fed and finished beef as well as their non gmo corn fed pigs. Recently, we've partnered with Beaver Brook Ranch, to provide all the beef and pork you see on our menu.
